Take this time to assemble all your ingredients and do your prep. Whisk well and add the cherries. Grease the loose-bottomed flan dish with butter, or brush with sunflower oil.
For sauce, in a small saucepan, combine sugar and cornstarch.
Add the dry mixture in three additions, alternating with the milk and ending with the flour mixture.
In a large mixing bowl, place the flour, sugar, cocoa, baking soda, and salt. Stir the flour mixture into the egg mixture. When the bowl is cool to the touch, place a plate on the top, and flip the whole thing over to turn out the cake.
