Carrot Cake From Scratch. In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon.
Line bottom of pans with parchment paper, and spray pans again. Add eggs, one at a time, beating well after each addition. In another bowl, whisk together flour, baking soda, cinnamon and salt; gradually beat into carrot mixture until blended.
Add carrot, pineapple, eggs, oil, and vanilla.
Add flour mixture, beating at low speed until blended.
Combine dry ingredients: In another bowl combine the flour, baking powder, baking soda, cinnamon, ginger, salt and nutmeg. Stir in pineapple, coconut and nuts. Divide batter between the two pans.
