Chocolate Zucchini Bundt Cake
Chocolate Zucchini Bundt Cake. Delicious with chocolate glaze, but can easily be served with whipped cream or a dusting of powdered sugar instead! Add sour cream and beat until well blended.
In a mixing bowl with paddle attachment combine the eggs, brown sugar, vegetable oil, buttermilk, and vanilla extract and beat on low speed until fully combined. In a large bowl, on medium speed, beat sugar, oil, eggs and vanilla until combined. Continue beating until the batter is smooth and well blended.
Add chocolate chips and grated zucchini to the batter and stir just until all ingredients are combined.
Add eggs, vanilla and milk to the butter mixture and mix till combined.
In a medium mixing bowl, whisk together flour, cocoa powder, salt and baking soda. In a bowl, combine the flour, cocoa powder, baking soda and salt; set aside. The mixture will look dry at this point.
