Chocolate Chia Pudding Keto. Serve the chocolate chia pudding in your favourite jars, with coconut yogurt and seasonal fruit. Mix the chia seeds, coconut milk, water, cacao powder, Erythritol and stevia.
To make chia seed pudding combine all your ingredients into a mason jar. Mix the chia seeds, coconut milk, water, cacao powder, Erythritol and stevia. Make sure to whisk continuously to combine all the ingredients and to not scorch the bottom of the pan.
Decorate with a dollop of fresh peanut butter, drizzle melted sugar-free dark chocolate, and chopped peanuts.
Mix with a fork until well combined.
If you prefer a smoother texture, use ground chia seeds (Note: ground chia seeds may taste bitter). Pour the mixture into cups, mason jars or ramekins (whichever available). Adjust sweetness and top with blueberries, if desired.
