Bakery Style Chocolate Chip Muffins. In a separate bowl, whisk together flour, baking powder, corn starch, and salt. In another bowl, whisk together the melted butter, light brown sugar, vanilla extract, eggs and sour cream until smooth and creamy.
Add the mashed banana and mix just until combined. Grease a jumbo muffin pan with butter. Whisk the milk and vinegar in a small bowl and set aside.
Smooth the batter with the back of the spoon and then sprinkle more chips on top in each cup.
Sift the flour and cornflour together, add in the sugar, salt, baking powder and baking soda.
Sift over plain flour, cornflour, baking powder, salt, and cinnamon. Add the mashed banana and mix just until combined. Add vegan yogurt and vanilla extract or paste and mix again.
