Chocolate Pie With Cocoa. Cut butter into about three pieces and add to pie liquid. (The butter will melt while cooking). Mix until all incorporated and smooth.
Press down the top edges to seal, then use a fork to crimp the sides to completely seal. Reduce the temperature to low to keep the mixture warm. Meanwhile, in a bowl, combine the sugar, flour, salt, and cocoa.
Beat sugar and eggs together in a large bowl until creamy; mix in cocoa powder, cornstarch, and salt until well blended.
Ladle out some of the chocolate mixture into beaten egg yolks, stirring constantly being sure not to scramble the eggs.
Gradually add milk to dry ingredients, stirring until smooth. For the filling: In a small saucepan, heat the milk until hot but not simmering. Pour in milk and egg yolks, and whisk together.
